Refreshing Cucumber Elderflower Cocktail

I purchased a bottle of Belvoir Elderflower Cordial a few months ago and had been meaning to give it a try.  We had our friends, Braden and Mandy, over for a barbecue the other weekend and decided to make a refreshing cucumber elderflower cocktail.  I basically combined two drink recipes to make this concoction and was excited to be able to use cucumbers from our garden.

Most of the cocktail recipes I had looked up that were similar to this cocktail called for tonic, but I had wanted to make it a little more fun so I used champagne {of course!}

Refreshing Cucumber Elderflower Cocktail Recipe:

  • 2 slices of cucumber
  • 1 1/2 oz gin
  • 1 oz elderflower cordial
  • Champagne to fill

First, muddle the cucumber slices in a rocks glass. Next add the gin and elderflower cordial. Fill the rest of the glass with champagne with room for ice. Lastly, add in a few ice cubes and gently stir once or twice.

Enjoy!
